Just One Plant: Mint Honey Simple Syrup

A pinch of freshness alongside a little sweetness turns your drinks into an herbal affair.

This simple syrup is sure to be an easy pantry staple to add a pinch of freshness wherever you'd usually like a little sweetness. Muddling the mint before adding the water allows the oils to infuse themselves with the honey, bringing out a more prominent freshness to the end result.


The Ingredients

1 bunch of mint

1c Honey

½c Water

Wooden spoon

Saucepot

Strainer

Mason jar with lid or jar with swing-top closure

The Process

In a saucepan, add 1c Honey and one bunch of mint over medium-low heat.

Stir to incorporate mint into honey, lightly tamping with a wooden spoon to release mint oils into honey.

Add the water to the mixture and bring to a light boil.

Remove from heat and stir to combine.

Let cool and pour through a strainer into a mason jar or swing-top bottle.

Will keep for 3 to 4 weeks when refrigerated.
